Oatmeal Cookie Recipes

On cold winter days, try my Oatmeal Cookie Recipes for a warm treat. I know from personal experience that when the snow is falling outside, tucking into a warm snack always makes me feel better.

This is a simple recipe to follow and it makes at least 24 biscuits, so more then enough to be shared around your friends and family. Total perpetration time including the baking time is only around 30 minutes so this is not a tricky recipe to make.

Ingredients

1 egg from a chicken (cluck cluck)
1/4 cup of nut oil (any flavor that you like, I prefer macadamias)
2 tablespoons of apple sauce (home made apple puree or supermarket brand)
1/2 cup of brown sugar
1 teaspoon of vanilla extract, or essence
1 cup of plain flour
1 teaspoon of baking powder
1 cup of rolled oats
100g dark chocolate, chopped up roughly

Method

1. Preset your oven to 180°C (or the equivalent if using Fahrenheit).

2. Line 2 baking trays with baking paper.

3. Use a small whisk, whip up the egg, oil, apple sauce, sugar and vanilla extract (or essence) in a bowl until combined well.

4. Next sift the flour and baking powder together into the egg mixture.

5. Now add the oats and chocolate. Stir gently to combine all ingredients well.

6. Place tablespoon sized amounts of mixture on your two baking trays, allowing room for spreading.

7. Bake for 15 to 20 minutes roughly, or until the biscuits are golden covered. Sit the cookies on the tray for a few minutes. Then transfer them to a wire-racked tray. This allows them to cool down.

8. Serve slightly warm and enjoy.
